Pantheon has introduced a new, 60 litre, dual speed model to its highly regarded spiral mixer range, a move that is in part, driven by the significant growth in in-house baking. And, unusually, for a mixer of this capacity, it is designed to operate from a regular 13-amp plug meaning that the costs associated with installing a 3-phase supply are unnecessary.
The new, floor standing, SM60 will readily meet the needs of medium to large production kitchens as the speed options provide operators with precise control over how each batch of dough is developed. The lower, 150rpm setting is used to combine and evenly distribute ingredients, moving to 200rpm to actively build the gluten structure, adding strength, and managing the dough’s extendibility.
A controlled, consistent mixing time of between 1 and 99 minutes is regulated by the in-built timer. Operator safety, meanwhile, is addressed with a microswitch controlled, stainless steel safety guard, a hard-wired emergency stop switch and anti-vibration framing. At all times, the motor is protected from damage through overload by the thermal overload device.
In practical terms, the choice of speed makes the mixer suitable for a broad range of products. It also allows operators to fine tune the mixing action to the requirements of different recipes, batch sizes, and desired dough characteristics.
